Wow, this week went by way too fast. Guess I'll be dragging myself back to work tomorrow. We are relaxing at home today. I made some breakfast- eggs and sausage with some pancakes for Darlin Dan.  We had some yummy apple pie flavored coffee. We plan to get out later in the day for a walk and a field trip to CVS.

 

Tomorrow starts a new month and I guess it's the most difficult month of the year. It's a month with lots of temptation and stress.  We need to stay focused and dedicated to our way of eating. I know that I can do this..........just need to stay focused and get some exercise!

I stayed home all day! I needed to get some projects done for a craft show coming up. Darlin Dan played golf-the weather was nice, so he had a great time on the golf course.

Now I have a referral to an ENT- I failed my hearing test at my physical!!! That constant ringing in my ear is going to drive me crazy!

Amanda and I got up early (5 AM) to do some power shopping........we got a little intimidated by the crowds this year................Walmart and Target were really crowded  and we weren't able to snag some of the items on our list...sold out!!

 

Don't know if I want to do this again--it was a little scarey......

We've been having major problems with our internet and cable this week-since Friday. The cable company is blaming it on the cold weather-whatever!! This really stinks-we pay WAY too much to the cable company for this....and our phone goes out too!!! It's 8 PM and we still have cable and internet........let's see how much longer tonight. We better be able to see Dancing with the Stars results.

 

I made chicken salad with my leftover crockpot chicken thighs!! YUM.

We filled up my little Fusion today for under $25.00!! Gas was $1.85 a gallon at HEB!!

Not  too low carb, but very yummy- I had put some chickn thighs in the crockpot and wanted to make something yummy. I had made my pot of pinto beans and decided to make some chicken enchiladas with red sauce and plenty of cheese. I just used a package of red enchilada sauce and spiced it up a tad.  This came out soooooo good. I did use corn tortillas-I have a boat load from a recent deal at HEB-got the corn tortillas free with sausage. But I decided that 2 corn tortillas isn't gonna kill me. This was a very simple and fast meal to put together. Just throw some chicken thighs in the crockpot ahead of time.

 

I've been thinkin about Thanksgiving. It will be pretty traditional around here. I will just have a "taste" of stuffing, no mashed potatoes for me, but I will splurge on the green bean casserole and marinated wild rice. I'm planning on making something with pumpkin-got 4 cans of pumpkin on sale at Walgreens last week.

 

I've started trying to be a more frugal low carber. I know this can be done. I'm stocking up on low carb items as they come on sale. This week bacon and chicken is on sale at HEB.

We got gas for 1.89 a gallon today....isn't that great?

The ringing in my ear has gotten SO bad and I can't hear half of what is said to me! I decided to take a few hours off from work today and go back to the Dr. I really need to be able to hear! It's interfering with my job, not to mention my whole life. Anyway, the Dr. gave me some different pills for congestion and a different nasal spray. Feels that it is allergy related-I sure hope this ringing noise goes away! Now, I'm having trouble sleeping!

We had such a pretty view from our room at the Omni. We had a great time,  we sure are tired.

We're taking a road trip to Corpus Christi. It's my sis-in-law's BD and we're going to her party! Looking forward to getting away for the weekend. Should be nice weather.

We finally got around to making our wine this week...........................We go to Custom Crush here in San Antonio.

We'll have lots of bottles of wine in about 5 weeks..................

Isn't it cute? I can't wait to try it out........wow, postal service is good, that didn't take very long.
