Making my own Sugar Free Flavored Syrups

I'm experimenting with making my own sugar free flavored syrup--like DaVinci's.  I'm using my Capella flavor drops, water and splenda. My first batch came out great. Super simple. I found a recipe somewhere (?) and tried it---1 cup water-boil in microwave, add 1 cup equiv. of sweetener-I used 1 splenda quikpak, and 10 drops flavor drops. Stir and let cool. I'm storing it in the fridge. I've used it in my coffee and in one of my ice cream recipesbigsqueeze_sm.

HOMEMADE SUGAR FREE LOW CARB PINA COLADA ICE CREAM

pina colada ic 003I made some yummy ice cream............Pina Colada flavored!! I'm continuing my experiments with my new ice cream maker!! This time my ice cream base recipe is a tweaked version of one I heard on the Martha Stewart Radio Channel.pina colada ic 001
1 cup heavy cream
2 cups of my homemade low carb "milk"
12 drops of Sweetzfree or 1/3-1/2 cup splenda
2 tsp sugar free fruit preserves
heat all this on the stove and simmer 10 minutes-do not boil
strain
let cool and put in fridge 8 hours
 
when ready to make ice cream I added 9 drops of coconut flavor drops and about 1/2 tsp vanilla
I added 1/4 cup crushed unsweetened pineapple toward the end of the churning.
It was ready in about 25-30 minutespina colada ic 002
Per 1/2 cup serving

How about some homemade sugar free BANANA SPLIT ICE CREAM!

I whipped up some 'scream! Oh my--this stuff is seriously great!! I made the basic homemade ice cream recipe. I added 1 banana and a handful of frozen strawberries that were chopped in the old food processor for a couple of seconds. Here's a couple of pix to drool over.....banana split ice cream 001banana split ice cream 002 Next time I will use only 1/2 of a banana (if any) and some of my Capella Banana flavor drops. That will lower the carb count. An ice cream store owner was on Martha Stewart Channel while I was driving from one school to the other today. He makes his own "gelato" in New York. He gave some good tips that I intend to try out.

Sugar Free Strawberry microwave shortcake

shortcakeWe were yearnin for something a little sweet the other day.  I decided to whip up a microwave strawberry shortcake.  I used fresh strawberries, sugar free strawberry glaze, light whipping cream, and a minute muffin.  I whipped up a microwave muffin using almond meal as my flour.  It was very tasty!shortcake1 003

Panna Cotta

I decided to make some Panna Cotta. I got this recipes from Linda's site...  http://www.genaw.com/lowcarb/index.html. Linda gave this recipe 5 stars- her highest rating. 

This recipe has 3 ingredients- unflavored gelatin, Da Vinci sugar free syrup, and heavy cream. It was very easy to make. I don't have much experience with unflavored gelatin, but I had no problems with the gelatin softening.  I had never tried Panna Cotta before.  It is very smooth and creamy.

Holiday!

We have a 3 day weekend!!! I'm so excited-the school year is almost over (8 more school days) and I'm sooooo looking forward to 10 weeks of SUMMER VACATION! (Just a little happy).......

Capella Flavor Drops

Blueberry Cream Muffins

I made some blueberry cream  muffins=I got the recipe from http://oh2bfit.blogspot.com/. I really like these muffins.
 blueberry muffins
Ingredients
2 oz blueberries
1 cup almond flour
1/4 cup flax seed meal
4 oz softened cream cheese
1 tsp baking powder
1 tbsp oil
1/4 cup ricotta cheese
1 tsp vanilla extract
2 eggs
Sweetzfree or Splenda to taste

Directions
Pre heat oven to 425*
 Mix all ingredients well in large mixing bowl. Once mixed, grease muffin tin. Add blueberries.
Distribute batter evenly into 12 muffin cups. Bake at 425* for 10 minutes.


Number of Servings: 12

CRACK SLAW?

Anybody ever heard of Crack Slaw? It is delicious and very easy to make.
This is how I made it:
1 lb. ground beef
1 TBSP  sesame oil
2 cloves garlic, minced
3 green onions, sliced
1/2 head shredded cabbage
1 TBSP lite soy sauce
Crushed red pepper flakes, to taste



1.  In a medium skillet or wok, brown the ground beef over medium heat until no longer pink. Remove the beef from the skillet, drain and set aside.

2. Heat sesame oil in the skillet over med-high heat. Add garlic and green onions; stir-fry for 2 min. Add  cabbage; stir-fry for 2 min. Add soy sauce, stir-fry for 2 min.

3. Return the cooked ground beef to skillet with vegetable mixture and season with red pepper flakes, to taste. Stir until ingredients are well combined and heated through, about 2 minutes.

Homemade Ice Cream

Here's the recipe
1 1/2 c heavy cream
1 1/2 c low carb "milk" (made with recipe posted yesterday)
3/8 cup sf DaVinci's syrup-today I used Amaretto
dash salt
carb count-16.4  for the entire recipe
recipe makes 6 servings of 1/2 cup-2.7 carbs a serving-(calories 133)

Now I have a Cuisinart ice cream maker

Yea! I got a great deal yesterday on an ice cream maker.......icecreamfreezerIsn't it lovely? I've already made some sugar free vanilla ice cream this afternoon.

In a medium bowl, mix together all ingredients. Pour into an ice cream maker and follow manufacturers directions.

Makin 'Scream

I found myself searching around for a quick and easy way to make low carb "ice cream" or frozen concoction.  Last night, my attempt was strawberry 'scream. I ate the whole bowl all by myself---not a shocker---I Red heart ice cream. Here's what I did- 3/4 cup frozen whole strawberries, 1/2 cup of my low carb "milk", a few drops of liquid splenda and a few drops of vanilla. I put the berries in my little food processor and let them get a little chopped and then added the rest. Guess what, it ended up to be soft serve 'scream.  I really enjoyed this-and plan to make some more. Tonight, I will attempt a vanilla concoction. Wish me luck!
 
Here's the homemade low carb "milk"
Homemade Low Carb Milk

One cup:

1 tablespoon of heavy cream
1 tablespoon of half and half
1 tablespoon  of instant dry milk
1 cup of cold water
sprinkle of salt
tiny sprinkle of splenda (if you want)

Just put the ingredients in and shake it up. Refrigerate.

about 3.35 carbs in 1 cup

So in this 'scream recipe I used 1/2 cup of "milk"- 1.7 carbs and 3/4 cup strawberries--6.1 net carbs=7.8 carbs for this whole 'scream bowl
