Vinegar is a good thing to put on a burn!

I burned the you know what out of my finger last night. I was making a chocolate  toffee bar recipe. I got the recipe here....http://pitterpatteroflosingpounds.blogspot.com/2008/08/chocolate-toffee-bar.html. Anyway, my finger hurt so bad. I did a search on burns and I read that you could put vinegar on a burn to lessen the pain. I thought, what the heck...I'm already hurting pretty bad, what do I have to lose? Well, it worked like a charm. It took all the pain away. I couldn't believe it. I just poured some vinegar on my burn and the pain pretty much instantly went away. WOW!
 
Back to the chocolate toffee bar recipe. I think this bar will be really good in some ice cream!!
 
I found DiabetiSweet at HEB plus today!! Both kinds.  I have a couple of recipes I want to try (mini pecan pie tarts). YUM.
 
Happy Friday and yippee it's a 3 day weekend.

Girls Night...Beading our fingers off

We had a girls night last night.  We got together and made some jewelry.  We had a great time!! We watched that cute dog show, Greatest American Dog. It's been a crazy week and I haven't really done much cooking. On my to do list...  do another video!! Good thing we're having a long weekend.....and Monday is Amanda's BD.

Seriously Good Chocolate Protein Ice Cream

I made some great Chocolate Ice Cream with Chocolate Calorie Countdown---tasted like Wendy's Frosty to me. Open-mouthedSeriously good.Red heart
2 cups Chocolate C.C.
1/2 cup cream
1 pkt stevia plus
1 tbsp. vanilla davinci's
1 scoop chocolate protein powder
2 drops sweetzfree (optional-to taste)
5 drops capella chocolate macadamia nut flavoring (optional)
mixed it all up and put in ice cream freezer
 
no pix- it was gobbled up too fast!

1st Day of School

School has officially started and I'm a little tired this evening.  We had a quick dinner of Chili Dogs-mine without the bun! I made another batch of those yummy snack/ power bars to take to school for a snack. I'm waiting for my vanilla ice cream to freeze, so we can have some of the brownies I made "a la Mode".
 
I did a really dumb thing this morning. I accidentally took both my husband's and my blood pressure medication. I got my diuretic and Danny's blood pressure medicine mixed up--I guess I was in too much of a hurry this morning. Danny came downstairs and looked at his pills I had laid out for him and he said, "I don't take a blue pill."   That's when I said the sh..... word and said, "now I've done it". I called my Dr. and he just laughed at me and I told me I was going to live!!

Yummy Brownies

0824081 I made brownies!! I had to try out my coconut flour I bought at Whole Foods.....I had made this recipe before, using coconut flour that I had ground up in my coffee grinder. This new batch is definitely better. This is another recipe that Lauren had put on her blog here..
I followed the directions-even the water bath. I used Xylitol and blackstrap molasses for the sweetener and I toasted the nuts. YUM. This is a good brownie recipe and it's easy too.
 
We had breakfast with Amanda and Jerry this mornin at our fav little mexican restaurant. We were very energetic this morning....we just finished cutting the grass! flowerI found this pretty flower while we were trimming the yard.
I made us a big pitcher of tea and we're chillin! It's gonna be a hot one today!

Lauren's Crunchy Low Carb Snack Bars are Delish

I could not resist making these things after I saw Lauren's blog, Healthy Indulgences.  Here's where I got the recipe  http://healthyindulgences.blogspot.com/2008/08/crunchy-low-carb-snack-bars.html. This recipe has almonds, pecans, coconut, nut butter, coconut oil, honey, vanilla, and sweetener, erythritol and stevia. I forgot to put the flax seeds! I used sugar free honey instead of regular honey and I added 1 drop of Sweetzfree to the chocolate icing.0823081I read the recipe wrong and put 1 tablespoon of cream (instead of 1 teaspoon) in the icing. I don't think that really made a difference.0823083They are seriously delicious. I Red heart toasted nuts and this has 'em. I really like the toasted coconut!
I was distracted because I was making breakfast the same time I was making these yummy bars, but these still came out great, even without the flax seeds.

Veggies & Vegan Restaurant.......

0821081I picked 5 tomatoes off my plants this mornin. This is a picture of a couple of my tomato plants.
 
I went to Green's Restaurant for lunch today. It's a vegetarian restaurant.0821082I ate a Popcorn Tofu Stir fry. I took a picture of it. It was yummy-didn't eat the brown rice it was served on. The chef came by our table and offered some ice cream made with soy milk. It was very good-but he said he did put some sugar in it.
 
I made some chocolate mocha protein ice cream tonight. Yum.

Candied Nut Protein Ice Cream

I just had to try some protein ice cream made with candied nuts. Vikki, at Vikki's Low-Carb Kitchen had a recipe on her blog for candied nuts..they sounded so yummy ...
 
I couldn't resist adding 2 tablespoons of these yummy nuts to some vanilla protein ice cream with 5 drops of Capella Pralines n Cream flavor drops. I used erythritol/stevia mix as my sweetener for the ice cream. I'm having some trouble getting the erythritol to dissolve. This ice cream came out very creamy.....here's my recipe
 
1 1/2 cups Hood's Calorie Countdown
1 scoop vanilla protein powder
1 tbsp vanilla da vinci's syrup
sweetener---
1 tbsp erythritol
1/8 teasp pure stevia extract
(could use splenda to taste--1/4 cup?)
optional-5 drops of Capella Pralines n Cream
I mixed this and put in fridge this morning,let it get good and cold
 
toasted 2 tablespoons nuts (I used pecans) in pan with a little butter and stirred until toasty-added a pinch of Splenda QuickPack-let this cool.
 
Put ice cream mix in ice cream maker slowly, when just about ready add cooled nuts slowly.082008

Trip to Whole Foods

1I was so close to Whole Foods that I just could not resist the urge to stop and stroll down the aisles. I picked up some flax seed bread that I Red heart.
I got my 1st bag of coconut flour-and yes, it looks different than when I grind it up. I'm anxious to make something yummy with it. I picked up a bag of Xylitol and a pound of blanched almond slivers. I also bought some Stevia.................

Pepperoncini Roast

I put a roast in the crockpot this morning.  I'm trying a new recipe and I'm hoping that it's as good as it sounds.
Pepperoncini Roast
 
3-4 pound roast
 1 cup pepperoncini peppers with juice
1/2 pkg. dry ranch dressing mix
garlic powder
2 tbsp worcestershire sauce
salt/pepper to taste3I served the roast with a yummy salad...2I made my husband some mashed potatoes cuz he just Red hearts them.  I didn't have any of those things.
This roast is very yummy. My hubby thought it was a little spicy. It didn't seem spicy to me.

Shopping with Grandkids

Today we went shopping with Corey and Nathaniel.  We went shopping for shoes and backpacks. It is "tax free" weekend in Texas for clothes, shoes, and backpacks. While we were out, I was able to visit a new Vitamin Shoppe hear the the house. I bought some Stevia and Erythritol. I've been wanting to try these sweeteners out. They were a little over priced-checked out internet prices when I got home.
I've got some vanilla ice cream going in my ice cream maker while I'm watching the olympics. I used the stevia/erythritol to sweeten my ice cream.

I've gone Chia Seed Crazy

I tried something totally off the wall last night. Chia Seed Chocolate Pudding Ice cream. I ate the whole gosh darn thing. I might be on to something. I will keep you posted.

Big Lots Find

puffsI found a nifty pan at Big Lots. I paid $10 for it. I tried it out today. I made some blueberry mini muffins and some delish ham and cheese egg bites and it didn't heat up the house! I like it better than microwaving....my muffins and egg bites look "cooked". In the microwave they don't get browned. I forgot to take a picture of my pretty muffins and egg bites-they are already put away in baggies in the fridge.
 
I'm going back to school tomorrow. The start of another year....................

Trying Chia Seeds

I bought some Chia Seeds today. I've read some interesting things about these little things. These seeds are very good for us. I found some at GNC and they aren't cheap.  I made some pudding with them this afternoon.  I used a recipe a found at Dar's blog. I just used a different flavor of SF syrup and used a drop of sweetzfree for the sweetener.
It was very interesting.  Not as good as ice cream-lol.  It filled me up and I didn't even think about ice cream tonight.
1/2 cup white Hood Calorie Countdown Dairy Beverage
1/2 cup sugar-free Blackberry syrup
1 drop sweetzfree
1/4 cup chia seeds
 
In a small bowl, whisk ingredients together in order given.  Chill for at least 30 minutes.  Stir and eat.
 
This makes 1 serving with about 5 net carbs.
 
i'm going to put some of these little things in some muffins and such.

Got to pick veggies

My veggies are starting to ripen! vegI'm proud of my baby veggies.
We are really enjoying the Olympics-watching it on tv and on the computer.

New You Tube on B-Ma's Peachy Low Carb Protein Ice Cream

  I think I got it accomplished today. I had to qweak my recipe a little and work on the camera.
Here's the recipe
1 1/2 cups low carb milk of choice
1/2 cup heavy cream
3 tbsp peach sf syrup
1 scoop of vanilla protein powder
1/4 cup chopped peaches
blend well and chll
 
pour into ice cream maker and let the machine do its magic.

Workin with the new camera to make a new YouTube episode

I decided to get familiar with the new camera today. I'm hoping that my videos come out better. I got everything  ready and the batteries died on me. Not a good sign. Sometimes things just don't go my way.  I will not give up................I really wanted to get a video finished this week.
 
My sis is coming to town this weekend!! Lookin forward to having some quality girl time. It will be so good to see her. We usually stay up late and get caught up with all the latest gossip.

Diet Cola Chicken

cola chickenThe diet cola chicken is good! It's so easy and tasty, not to mention Low Carb!
I lightly browned 3 chicken breasts and then added 3/4 cup of Diet Rite cola (made with Splenda) and 3/4 cup low carb catsup. I did add some liquid smoke- maybe 2 tsp.
I simmered this about 45 minutes. Yum....I served this with some Dreamfield's Macaroni Salad.

I can't believe I'm eatin' a BISCUIT

I made the biscuits Lauren blogged about here.. http://healthyindulgences.blogspot.com/2008/08/low-carb-gluten-free-biscuits.html. I'm very proud of how they came out.
I'm sitting here eating a low carb biscuit that I made!bisc2I think they came out so pretty and tasty.....bisc1 I can't believe I made such pretty biscuits.......bisc3 I know it looks more like a muffin, but who cares. I ate a biscuit with sugar free blueberry preserves I bought in Schulenburg, Tx at the Oakridge Smokehouse Restaurant.
 
I can't wait to make some of the other versions of this recipe. I used unblanched almonds that I ground up myself. Next time, I plan to use blanched almonds for a lighter finished product. These look like wheat rolls.
