9月30日 Feelin CrummyI've been feelin crummy for 2 days-probably allergy related-stuffed up ear! I actually slept all night, 2 nights in a row. Anyway, I just attended a 2 day inservice, and I shared my yummy blueberry muffins. Everyone seemed amazed that they were low carb!! They are really very good!! Now, we are out and I have to find the energy to make some more. I don't think I'll be makin much til the weekend. 9月28日 Beautiful Blueberry Muffins from LaurenI made these delicious muffins today.

9月26日 Hash Brown ChayoteGoodnes Gracious-Hash Brown Chayote is Delish. So delish, my Darlin Dan gobbled it up. This strange looking vegetable is quickly becoming my new BF.
This is what I did. Again, I used only 1 chayote because I didn't want to waste a precious chayote if I didn't care for the end result. I peeled the chayote and then I cut it in half lengthwise. I cut out the small inner seed. Then I got out my trusty salad shooter and grated the chayote. I removed the excess moisture by placing the grated chayote in a colander lined with a coffee maker paper liner.
Next time I make this, I will top it with some sliced green onion and bacon bits.

I was able to find some easily at La Michocana, a mexican food market. The price isn't too bad, 69 cents a pound. I bought 3 Chayotes/ 3 pounds worth. I've got a couple of recipes I want to try. 9月22日 Bean Cake9月21日 Making a pot of soy beansI'm trying another batch of soy beans. I bought a bag of dry soy beans at my neighborhood oriental grocery store. My last batch that I made, the beans would not soften up! This time I wanted to try to cook them in my pressure cooker.
I soaked them overnight and then I put them in the freezer (a la Dana Carpender's method).
Now, I'm cookin them in the pressure cooker.
9月20日 Shirataki Cheese Burger Noodle BakeI experimented with Shirataki noodles today. I'm not fond of the noodle by itself. It is kinda stinky right out of the bag. It is very chewy. I like it all doctored up. I've liked the noodle in my lo mein and chopped up for faux rice. Last week, I found this recipe http://dardreams.spaces.live.com/blog/cns!A6DA5B39E04E9E65!175.entry
and did some changes.I made half of the recipe.
This is a nice way to make the noodles. I want to make this again, next time a little spicier.

fast, easy, yummy!! Few ingredients- PB. sweetener, 2 eggs, vanilla. I used half creamy, half chunky PB. For my sweeteners I used 1 splenda quick pack and 1/3 cup brown diabetisweet. I rolled the cookie dough balls in regular diabetisweet.

We'll be celebrating at Dave and Buster's tonight. Pix to come. 9月16日 Experimenting with Tofu Shiratake NoodlesI decided to try the chopping the Shiratake Noodles in the food processor trick. I made some Thai Crack Slaw tonight. My Darlin Dan had wanted rice last time I made Crack Slaw, so I made him some. I thought about what Vikki had written the other day about making "rice" out of shiratake noodles. She puts them in the old food processor. So, I made me some. I really liked my "rice"!! I think it's a winner. 9月15日 Big Brother Finale Tomorrow NightI can't believe that Big Brother ends tomorrow night Watchin the Cowboys ,Houston update & Dreamfields Pasta SaladWell I got about 6 of the 12 things done on my Sunday to-do list. So, this afternoon, Darlin Dan took me to HEB Plus for a little outing. When we got home, Jessica had hot wings and pizza waiting for us. Major yum. I had some hot wings and the top of 2 pieces of pizza (no pizza crust allowed). No kitchen duty tonight.
I think we are enjoying the Cowboy game-it's hard to tell with all the yelling going on.
I heard from my family in Houston this morning. They have power!! I'm sure they are so relieved and cooler.
I made a pretty good pasta salad last night-with Dreamfield's pasta of course. HEB has a special going right now. $1 off the price of 2. Anyway, I just kinda made up a recipe!!! I made my own vinagrette out of Balsamic Vinegar, dijon mustard, olive oil, garlic. I added red bell pepper, red onion, celery, broccoli, parm cheese, fresh basil from the garden, freshly ground pepper to the rotini pasta. Tastes even better today at lunch!! 9月14日 My sis is okay in HoustonI talked to my sis tonight. She lives in Houston and weathered Ike this weekend. I am so very thankful that they are okay. The cell phone reception has not been great and many times I've called them and the phone goes straight to voice mail. They are without electricity and so the heat is pretty unbearable. She told me the nights are very uncomfortable without air conditioning. The roof on her house has a little damage and they are very relieved that is all the damage they sustained from this storm. They were told today that they will probably be without running water tomorrow. They have filled every available container with water and have a good supply of bottled water. She told me she stood in line for 3 hours for a bag of ice. They have been cooking some of their meals on a gas grill.
She told me that the storm was horrible, especially the second wall after the eye of the hurricane. The hurricane was so large that the storm lasted a very long time. Let's pray that everyone touched by the hurricane is okay and that they can get back to their "normal" lives soon. Baking some Sugar Free Raspberry Swirl Lemon BarsI baked these yummy bars today. 9月13日 Made Chilequiles with New Pots & PansI got up and made Chilequiles this mornin. Not exactly low carb, but delicious. Scrambled eggs mixed with pico de gallo, fried (cut) corn tortillas, and plenty of cheddar cheese. Delicious. (Oh, did I say that already) I usually splurge my carbs on this dish-since it has corn tortillas in it-but it is one of my VERY favorite breakfast dishes. I made some homemade refried beans and of course, I had to warm some flour tortillas for Darlin Dan. I had half of a low carb tortilla. |
