Feelin Crummy

I've been feelin crummy for 2 days-probably allergy related-stuffed up ear! I actually slept all night, 2 nights in a row. Anyway, I just attended a 2 day inservice, and I shared my yummy blueberry muffins. Everyone seemed amazed that they were low carb!! They are really very good!! Now, we are out and I have to find the energy to make some more. I don't think I'll be makin much til the weekend.

Hash Brown Chayote

Goodnes Gracious-Hash Brown Chayote is Delish. So delish, my Darlin Dan gobbled it up. This strange looking vegetable is quickly becoming my new BF.
This is what I did. Again, I used only 1 chayote because I didn't want to waste a precious chayote if I didn't care for the end result. I peeled the chayote and then I cut it in half lengthwise. I cut out the small inner seed. Then I got out my trusty salad shooter and grated the chayote. I removed the excess moisture by placing the grated chayote in a colander lined with a coffee maker paper liner.chayote1 1 chayote=1 1/2 cups grated goodness. I sauteed the chayote in a skillet with a small amount of oil. I added 1/2 of a chopped onion.chayote2 I let it cook until it started to brown up. I seasoned it with sea salt and freshly ground pepper. When the chayote was ready, I topped it with grated cheddar cheese. chayote3 It does shrink up (just like a potato!) or cook down....?
Next time I make this, I will top it with some sliced green onion and bacon bits.
This is really some good stuff..............

Fried "Chay-apples"

I have to admit-these are pretty tasty things. I combined a few recipes and came up with a great tasting fried "Chay-apple".
I will write out the recipe when I make a bigger batch. For my experiment, I used 1 chayote.
We ate some homemade low carb cinnamon ice cream with fried "Chay-apples" on top!

What in the world is Chayote?

I started reading about Chayote on Low Carb Friends. The Chayote is from the gourd family, along with melons, cucumbers and squash. Thumbnail for version as of 12:40, 27 August 2005They are quite peculiar looking.  A Chayote is about the size of a pear. Chayote inside It is also called a Mirliton or Chocho. 1 Chayote= 35 calores, 7.9 carbs, 3.5 fiber= 4.4 net carbs ......Not bad.

 

I was able to find some easily at La Michocana, a mexican food market.  The price isn't too bad, 69 cents a pound. I bought 3 Chayotes/ 3 pounds worth.

I've got a couple of recipes I want to try.

Chocolate chunk peanut butter cookies

cookies1 I made the same peanut butter cookies, but added some sugar free chocolate chunks and sprinkled a couple of peanuts on top! Yum!

Making a pot of soy beans

I'm trying another batch of soy beans. I bought a bag of dry soy beans at my neighborhood oriental grocery store. My last batch that I made, the beans would not soften up! This time I wanted to try to cook them in my pressure cooker.
I soaked them overnight and then I put them in the freezer (a la Dana Carpender's method).
Now, I'm cookin them in the pressure cooker. soybeansThey came out so great! Very soft and ready for some new recipes......bean bread and bean cake!

Shirataki Cheese Burger Noodle Bake

I experimented with Shirataki noodles today. I'm not fond of the noodle by itself. It is kinda stinky right out of the bag. It is very chewy. I like it all doctored up. I've liked the noodle in my lo mein and chopped up for faux rice. Last week,  I found this recipe  http://dardreams.spaces.live.com/blog/cns!A6DA5B39E04E9E65!175.entry 
and did some changes.I made half of the recipe.noodles1 My ingredients include 1 pkg. noodles(chopped up in the food processor),1/2 lb. browned hamburger meat (I added 1/2 onion and some celery), 1 cup cheese, 2 eggs, and I added some southwest chipotle Mrs Dash. noodles2noodles3noodles4I baked it in a pie plate and added a little shredded cheese on top.
This is a nice way to make the noodles. I want to make this again, next time a little spicier.

Low Carb Peanut Butter Cookies

 fast, easy, yummy!!  Few ingredients- PB. sweetener, 2 eggs, vanilla. I used half creamy, half chunky PB. For my sweeteners I used 1 splenda quick pack and 1/3 cup brown diabetisweet. I rolled the cookie dough balls in regular diabetisweet.

Darlin Dan's Birthday

HAPPY BIRTHDAY DANNY!! It's my Darlin's birthday......he won't be getting a low carb cake, but I won't have any of his sinful birthday cake.   We'll be celebrating at Dave and Buster's tonight. Pix to come.

Experimenting with Tofu Shiratake Noodles

I decided to try the chopping the Shiratake Noodles in the food processor trick. I made some Thai Crack Slaw tonight. My Darlin Dan had wanted rice last time I made Crack Slaw, so I made him some. I thought about what Vikki had written the other day about making "rice" out of shiratake noodles. She  puts them in the old food processor. So, I made me some. I really liked my "rice"!! I think it's a winner.

Big Brother Finale Tomorrow Night

I can't believe that Big Brother ends tomorrow nightSad. I have no life- I Red heartreality shows. I'm rooting for Dan to win the $500,000. My favs this year...Dan and Renny.  I got so sad when Renny was voted out. Anyway, I have watched just about every season. It goes all the way back to when I would visit my Dad every evening  and watch TV with him. He would usually keep his TV on CBS and so I got hooked on Survivor, Amazing Race, and Big Brother. Big Brother is my #1 favorite. I also Red heartAmerican Idol, Dancing with the Stars, and So You Think You Can Dance---like I said, I have no life...................

Watchin the Cowboys ,Houston update & Dreamfields Pasta Salad

Well I got about 6 of the 12 things done on my Sunday to-do list. So, this afternoon, Darlin Dan took me to HEB Plus for a little outing. When we got home, Jessica had hot wings and pizza waiting for us. Major yum. I had some hot wings and the top of 2 pieces of pizza (no pizza crust allowed). No kitchen duty tonight.
 
I think we are enjoying the Cowboy game-it's hard to tell with all the yelling going on.
 
I heard from my family in Houston this morning. They have power!! I'm sure they are so relieved and cooler.
 
I made a pretty good pasta salad last night-with Dreamfield's pasta of course. HEB has a special going right now. $1 off the price of 2. Anyway, I just kinda made up a recipe!!! I made my own vinagrette out of Balsamic Vinegar, dijon mustard, olive oil, garlic. I added red bell pepper, red onion, celery, broccoli, parm cheese, fresh basil from the garden, freshly ground pepper to the rotini pasta. Tastes even better today at lunch!!

My sis is okay in Houston

I talked to my sis tonight. She lives in Houston and weathered Ike this weekend.  I am so  very thankful that they are okay. The cell phone reception has not been great and many times I've called them and the phone goes straight to voice mail.  They are without electricity and so the heat is pretty unbearable.  She told me the nights are very uncomfortable without air conditioning. The roof on her house has a little damage and they are very relieved that is all the damage they sustained from this storm. They were told today that they will probably be without running water tomorrow. They have filled every available container with water and have a good supply of bottled water. She told me she stood in line for 3 hours for a bag of ice.  They have been cooking some of their meals on a gas grill. 
 
She told me that the storm was horrible, especially the second wall after the eye of the hurricane. The hurricane was so large that the storm lasted a very long time.  Let's pray that everyone touched by the hurricane is okay and that they can get back to their "normal" lives soon.

Made Chilequiles with New Pots & Pans

0906082Last week, I bought a new set of pots & pans at Macy's. 0913081I just had to show off the skillet.  I got such a good deal and  I'm so happy with them.
I got up and made Chilequiles this mornin. Not exactly low carb, but delicious. Scrambled eggs mixed with pico de gallo, fried (cut) corn tortillas, and plenty of cheddar cheese. Delicious. (Oh, did I say that already) I usually splurge my carbs on this dish-since it has corn tortillas in it-but it is one of my VERY favorite breakfast dishes. I made some homemade refried beans and of course, I had to warm some flour tortillas for Darlin Dan. I had half of a low carb tortilla.091308
