3月17日 Spring Break is overWow....Spring Break is over and it's back to work. Danny has lost 15 lbs! I've lost 8.
We're enjoying our Wii. Danny loves to play tennis on it.
I dropped my cell phone in the toilet yesterday afternoon. What a klutz. I figured out how to transfer my phone number to Danny's old phone.....over the internet! Here's the birthday girl sitting next to Anthony. Amanda and I made a lasagna dinner with italian tomatoes, salad, carrots, and garlic bread. Anthony's grandmother joined us for dinner. We had a grand time. This was definitely NOT low carb, but one meal isn't going to kill us, just slow down the fat burnin'.

I forgot to take a picture of the whole pizza and we got a quick picture of Anthony's piece. The crust looks burnt, but believe me, this is delicious. Darlin Dan could not believe that I made this!!He was so happy to get to eat pizza! He has had such a good start on his low carb eating, and I wanted to reward him with one of his favorite foods, low carb style.
I got the recipe off of Low Carb Friends. It is very easy-the crust is cheese and eggs!!

Thin and Crispy Pizza Crust
Heat oven to 450 degrees In a bowl thoroughly combine 3 eggs 2 cups shredded mozzarella cheese 1 cup shredded cheddar cheese
1 tsp garlic powder 1 tsp basil press evenly on parchment paper on top of a pizza pan or cookie sheet (this makes one 16 inch pizza crust) Bake at 450 degrees until golden brown (about 10 to 15 minutes) I set my timer for 10 minutes and actually flipped over the crust.
When my crust was done, I put 1/4 cup of marinara sauce on top, then 1 cup mozzarella cheese, then plenty of pepperoni
I put the pizza back in the oven with the broiler on, just until cheese was melted.

Wow-can you believe this? We've been workin out with the Wii-we have alot of fun bowling, playing tennis and golf. We've been very good with staying low carb.
There are no pix of the hominy-we ate it all before I could snap a picture.
2月4日 Trying Juanita's Mexican HominyThere was a discussion on Low Carb Friends forum about this Juanita's Mexican Hominy-4 net carbs per 1/2 cup serving. I decided to give it a try. We were all pleasantly surprised how good this tasted. I made it Au Gratin. I did put the hominy in my salad shooter, so it looked like rice. We had Shrimp ceviche, jalapeno poppers, chicken wings, cheese slices, little smokies, fresh broccoli and cauliflower, and some hot and spicy pork rinds. I thinks we had a FANTASTIC week 1! 1月30日 Some Good Low Carb BiscuitsHere's the recipe--Fluffy Biscuits-from Healthy Indulgences Adapted from a recipe by Laura Dolson LAUREN'S FLUFFY BISCUITS In a medium bowl, mix the almond flour, salt and baking soda or powder with a fork. Cut in the fat using the fork until the butter is all incorporated and the mixture is crumbly and not dry. Chill this mixture for at least 5 minutes and preferably longer to get the fat as cold as possible. In a small bowl, beat the egg whites with the fork until they look foamy. Add the egg whites to the almond flour mixture and whisk together with the fork for just a couple seconds breaking up any large chunks of flour. The batter will be thin and lumpy. Divide this into four portions in a muffin top pan greased very well or lined with nonstick foil. Bake immediately so that the fat doesn't start to get warm. Bake at 400º for about 12 minutes or until golden brown. Makes 4 biscuits * The recipe seems to work with either one. I used baking soda. Although baking powder does have carbs, there are not enough to affect the counts. 1月29日 Great Low Carb Oven Fried ChickenThis chicken came out great--the breading is pork rinds! It was so simple and I will be making this again!
I just put some pork rinds in my mini food processor and got it ground up. I just added some onion powder and salt/pepper. I put this in a zip lock bag.
I beat 1 egg and dipped 3 big bone in chicken breasts-they are on sale this week- 99 cents a pound!
I put chicken breast in the bag one at a time and gave it a shake-then put them on a foil lined pan in a 400 degree oven for about 40 minutes.
This is low carb shake and bake!!
