Spring Break is over

Wow....Spring Break is over and it's back to work. Danny has lost 15 lbs! I've lost 8.
We're enjoying our Wii. Danny loves to play tennis on it.
I dropped my cell phone in the toilet yesterday afternoon. What a klutz.  I figured out how to transfer my phone number to Danny's old phone.....over the internet! How high tech is that?

Danny has lost 11 pounds!!! Isn't that fantastic?
I've stayed at 7.5....but I'm okay with that-I've been doing this longer and very happy with over 7 pounds in one month.

HAPPY BIRTHDAY JESSICA

Today is my daughter's birthday.  30 years ago, on Valentines Day, Jessica Marie was born. We had her lasagna dinner last night 'cuz she has big plans today.
Isn't her cake simply beautiful? Her boyfriend, Anthony, got this scrumptious-and not low carb cake...
Here's the birthday girl sitting next to Anthony. Amanda and I made a lasagna  dinner with italian tomatoes, salad, carrots, and garlic bread. Anthony's grandmother joined us for dinner. We had a grand time. This was definitely NOT low carb, but one meal isn't going to kill us, just slow down the fat burnin'.

Experimenting with Hominy

When I read that Juanita's Mexican style Hominy was lower carb, I got very curious and wanted to do some experimenting. Last night, I made a hominy mash. Darlin Dan did not care for itSad, but I liked it, especially with chicken gravy on top! I guess you could compare it to the mashed cauliflower that we LCers make from time to time.

Oven Fried Tipapia-Breaded with pork rinds!!

This oven fried fish was very good!! I've discovered that pork rinds make an excellent breading. I've now used it to make oven fried chicken and fish. I'm Red hearting pork rinds!!
I made some low carb mac and cheese using Dreamfield's elbow pasta. We had a winner, winner, fish dinner!

Low Carb Cruisin with Jimmy Moore

We had such a wonderful time on the Low Carb Cruise. This was our 5th cruise, but we will never forget this cruise. We learned so much and met so many extremely nice people.
Here I am with Livin La Vida Low Carb man- Jimmy Moore. Wow, what a great man. He has helped so many people get on the low carb way of life.  He is fantastic--and a great Texas Hold 'em player to boot.

Low Carb Pizza..................Yum

emade Low Carb Pepperoni Pizza................. I forgot to take a picture of the whole pizza and we got a quick picture of Anthony's piece. The crust looks burnt, but believe me, this is delicious. Darlin Dan could not believe that I made this!!
He was so happy to get to eat pizza! He has had such a good start on his low carb eating, and I wanted to reward him with one of his favorite foods, low carb style.
I got the recipe off of Low Carb Friends. It is very easy-the crust is cheese and eggs!!
NancyElle created this recipe. Here's where to get it-
Thin and Crispy Pizza Crust
Heat oven to 450 degrees
In a bowl thoroughly combine
3 eggs
2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
1 tsp garlic powder
1 tsp basil
press evenly on parchment paper on top of a pizza pan or cookie sheet
(this makes one 16 inch pizza crust)
Bake at 450 degrees until golden brown (about 10 to 15 minutes)
I set my timer for 10 minutes and actually flipped over the crust.
 
When my crust was done, I put 1/4 cup of marinara sauce on top, then 1 cup mozzarella cheese, then plenty of pepperoni
I put the pizza back in the oven with the broiler on, just until cheese was melted.

We're losin it!

Danny - down 5.5 lbs

Wow-can you believe this? We've been workin out with the Wii-we have alot of fun bowling, playing tennis and golf.  We've been very good with staying low carb.
 
There are no pix of the hominy-we ate it all before I could snap a picture.

Trying Juanita's Mexican Hominy

There was a discussion on Low Carb Friends forum about this Juanita's Mexican Hominy-4 net carbs per 1/2 cup serving. I decided to give it a try. We were all pleasantly surprised how good this tasted. I made it Au Gratin. I did put the hominy in my salad shooter, so it looked like rice. I will post pix later.

Low Carb Super Bowl

We had a great low carb Super Bowl spread! We had Shrimp ceviche, jalapeno poppers, chicken wings, cheese slices, little smokies, fresh broccoli and cauliflower, and some hot and spicy pork rinds. This was a very satisfying Super Bowl munchfest..............and all low carb. Will add px tonight. I'm a little behind, I went to Beading Buddies last night.

Low Carb Chocolate Donuts

To celebrate our great week, I made up some low carb chocolate donuts. The verdict is still out on these-Darlin Dan does like them-but asks "does everything have to be chocolate?" OOPS! I'm such a chocoholic that I forgot to remember that Darlin Dan isn't that crazy about chocolate. I've already spotted another recipe to try-not chocolate. To be continued........

Some Good Low Carb Biscuits

These biscuits are pretty tasty..Darlin Dan ate 2.
Here's the recipe--Fluffy Biscuits-from Healthy Indulgences
Adapted from a recipe by Laura Dolson

LAUREN'S FLUFFY BISCUITS
1 cup plus 2 tablespoons almond flour, 4 ounces
1/4 teaspoon salt
1/2 teaspoon baking soda or 3/4 teaspoon baking powder *
1 1/2 tablespoons cold unsalted butter, shortening or pork fat, 18 grams or 1/2 ounce **
4 egg whites

In a medium bowl, mix the almond flour, salt and baking soda or powder with a fork. Cut in the fat using the fork until the butter is all incorporated and the mixture is crumbly and not dry. Chill this mixture for at least 5 minutes and preferably longer to get the fat as cold as possible.

In a small bowl, beat the egg whites with the fork until they look foamy. Add the egg whites to the almond flour mixture and whisk together with the fork for just a couple seconds breaking up any large chunks of flour. The batter will be thin and lumpy. Divide this into four portions in a muffin top pan greased very well or lined with nonstick foil. Bake immediately so that the fat doesn't start to get warm. Bake at 400º for about 12 minutes or until golden brown.

Makes 4 biscuits
Can be frozen

* The recipe seems to work with either one. I used baking soda. Although baking powder does have carbs, there are not enough to affect the counts.
Per Biscuit: 221 Calories; 19g Fat; 10g Protein; 6g Carbohydrate; 3g Dietary Fiber; 3g Net Carbs

Great Low Carb Oven Fried Chicken

This chicken came out great--the breading is pork rinds! It was so simple and I will be making this again!
I just put some pork rinds in my mini food processor and got it ground up. I just added some onion powder and salt/pepper. I put this in a zip lock bag.
I beat 1 egg and dipped 3 big bone in chicken breasts-they are on sale this week- 99 cents a pound!
I put  chicken breast in the bag one at a time and gave it a shake-then put them on a foil lined pan in a 400 degree oven for about 40 minutes.
 
This is low carb shake and bake!!
