    I've been very lazy

    I can't believe it! I have been soooooo lazy! It is time to get back on track and re-dedicate myself to low carb. I have been cheating and not exercising. This has got to stop  now. We just got back from Las Vegas and I was soooo baaaddd. I even ate SUGAR!! I feel so guilty. NO MORE SUGAR!
     
    Good news...............Amanda has now started her new job! She is a 6th grade Math teacher.

    My daughter is now a middle school Math Teacher! Way to go Amanda! She has signed her contract and now we work at the the same school district.

    We're Back and needing to Low Carb

    We had a wonderful time being bad-fishing, swimming, reading, playing games, watching movies, crocheting, cooking, eating and drinking.
    Now it's back to being serious low carbers!
    Tonight we had steak, salad and broccoli for dinner!

    Vacation time

    We are enjoying the Texas Gulf Coast this week with family! We are staying in a 3 bedroom condo on the water. It's extremely hot! We're used to this. San Antonio has very hot summers too. Last year when we spent a week on the coast, it rained almost every day. Wish it would do that this year. San Antonio and Corpus Christi need the rain sooo bad.

    It was crazy trying to get away from San Antonio on Friday. We both worked half day and had to get end of month reports/paperwork done. We had both been working non-stop last week. I did the serious packing Thursday night until midnight and got up at 4:30am on Friday t0 get to work as early as I could. As it was, I didn't get home until after 1 Friday afternoon. It took us an hour to load up the truck and off we go!!

    We're having a great time! Fishing, swimming, eating, playing games, watching movies.............sleeping late cuz we're staying up late.............to be continued

    I've Been MIA

    Wow-I've been neglecting my world! I've kinda sorta been in a rut-but now it's summer and I'm hoping to geet back in a better routine of writing, exercising, cooking, etc.....
     
    I'm working my part time job in the mornings and shopping the last 2 days in the afternoons. I've been very dedicated to bargain shopping with coupons. This has really paid off. The internet makes it alot easier to find good deals. People blog about the best deals and all you have to do is go do them.
     
    Darlin Dan has lost 23 lbs. and I'm still stuck in a rut at 8 lbs. He looks great and seems to be very used to this way of eating.
     
    I'm participating in 2 challenges with the healthmiles program throught Humana. I wear a pedometer and download my steps to my computer every night.  I'm earning points that can be used to buy gift cards! I'm getting close to earning my 2nd $25 gift card.

    New Toy for Birthday

     I've been playing with my new toy-My Darlin Dan got me a Blackberry for the rest of my birthday/mother's day! I'm sooooooo spooooiiiilllleed. Anyway, we received a letter from verizon that we could get this blackberry at a good price and we grabbed it. I don't need it, but I've always wanted one-from the moment the blackberry's (?) came out.  I'm learning all about it and it is so great!

    Working out with Wii Fit

    Darlin Dan and I have been having a great time working out with the Wii Fit.   Tonight we did some step aerobics and some boxing with step aerobics. What a blast. Danny loves to play tennis on the Wii.
     
    Our newest game is Deal or No Deal. I got a great deal on it!! It's a hoot.

    Happy Mother's Day

    Another birthday just passed and now it's Mother's Day! I hope everyone has a great Mom's Day!
     
    Good news-Darlin Dan has lost 21 lbs.
    I've lost 9!
     
    We had a nice day yesterday, considering it was my BD and I'm another year older. The girls took me to a nursery and bought me some pretty plants that we will plant up today.
     
    Darlin Dan took me out to eat and shopping. He bought me some beautiful emerald earrings to go with my emerald ring he got me for Christmas.
     
    My sis came to town Friday night. So good to see her and my bro in law.
     
    School will be out in 4 weeks!!

    I can't believe it's Sunday

    I actually did some cooking-
    I made 2 recipes from Low Carb Friends
    No bake chocolate cookies and Coconut milk jello.
    I'll be taking both of these this week for lunch..
     
    I also made low carb pepperoni pizza tonight
    YUM
     
    My back is FINALLY back to normal..........

    Beautiful day in SA

    We sure had beautful weather here in SA today. We worked on the pool some today. IT is in bad shape and needs alot of work.
     
     I did some heavy duty CVS shopping. I spent about $4 for $131 worth of goodies.
     
    I was able to play 2 games of bowling today on the Wii. My back is much better, but still not 100%.

    Update

    Darlin Dan has lost 20 lbs!
    I gained 1 lb....I'm blaming it on my aching back. It is much better so I'll be exercising a bit more now.
     
    Fiesta week has officially started in San Antonio. Time for some Fiesta posts!

    HAPPY EASTER

    We had a nice day. We spent the afternoon and evening at Danny's sisters house. We had BBQ and played Bingo. We had a Easter egg hunt for the children.
     
    I didn't have a good week. Tuesday morning I hurt my back while I was getting dressed to go to work. I don't know how putting on my underwear could cause me sooo much pain, but it did. Today is the 1st day since Tuesday that I haven't taken anything for the pain. I wasn't able to work very much on Tuesday. I spent most of that day on a heating pad.. I could hardly get out of bed on Wednesday. The pain was horrible. Everyday my back felt a little better-thank God.
     
    I haven't exercised all week-I wasnt't even taking the stairs at work. I'm thinking that I'll be able to exercise tomorrow.

    Time sure flies by

    I lost 2 lbs this week!! Danny gained .25 lbs. He had a couple of hamburgers......WITH the bun this week.
     
    I can't believe that Easter is this Sunday. Time sure is flying by.
     
    Target has a coupon for .55 off Splenda. There is also a manufact. coupon from the sunday paper for $3off 2 splenda products.  This is a good deal if you need some splenda. I bought some splenda coffee flavors with the coupons and spent under a $1 each.

    Im Stuck in a rut...Darlin Dan is my HERO

    Well, I'm stuck-not losing any weight-but my DARLIN DAN has lost another 2 pounds!!!!! He is trying sooooo hard! I'm soooo proud of him-he's lost 19 pounds and his pants are starting to fall off him! He's working out every day on the Wii...I wish I could say the same thing, but when I get home, I'm getting dinner on the table. I'm trying to plan better and I'm making a monthly menu. I hasven't been 100% successful with this, but it has helped. I intend to prepare some meals ahead of time this week.

    Chicken Posole

    I made some delicious Chicken Posole for poker night. I've been very interested in hominy ever since I read that Juanita's mexican style hominy has less carbs than other hominy. With the help of Darlin Dan, I found the perfect recipe. The first time I tried to make Posole, I made it with tomato sauce...............big mistake! Darlin took me to taste menudo and told me that Chicken Posole tastes just like that.
    Here's the recipe--
    INGREDIENTS
    • 2 1/2 pounds chicken 
    • 4 tablespoons vegetable oil, divided
    • 1 onion, chopped
    • 3 cloves garlic, minced
    • 2 1/2 quarts chicken broth
    • 3 cups water
    • 1 teaspoon crumbled dried oregano
    • 2 teaspoons salt
    • 4 tablespoons chili powder, or to taste
    • 3 cups white hominy, rinsed and drained

      DIRECTIONS

    1. Heat 2 tablespoons canola oil in a deep skillet over medium-high heat. Add chicken, and cook until no longer pink and juices run clear, about 20 minutes. Remove from skillet, drain, and cool. When completely cooled, shred chicken with a fork.
    2. Heat remaining 2 tablespoons canola oil in the same skillet over medium-high heat. Cook and stir onion and garlic until soft and transparent, about 5 minutes. Return shredded chicken to the skillet. Stir in the chicken broth, water, oregano, salt, and chili powder. Reduce heat to low, cover, and cook about 90 minutes. Stir in the hominy and cook until tender, about 15 minutes more. Taste to adjust seasonings, adding more salt and chili powder, if desired.

    Serve with chopped onion and lemon.

    Chicken Spaghetti made with Dreamfields Pasta

    We   had some good lower carb chicken spaghetti tonight. Very simple and yummy.
     Chicken Spaghetti:

    1. Cook 1 pkg Dreamfield spaghetti pieces until al dente.

    2. When spaghetti is cooked, combine in a large bowl with the following:

    1 can Cream of Mushroom Soup
    1 can Cream of Chicken Soup
    2 cups chicken
    2 cups of the cheddar (reserve 1 cup)
    1/2  green pepper chopped
    1/2  onion chopped
    1 tsp. seasoned salt
    Salt & pepper to taste

    3. Put the mixture into 2 greased 2-quart casserole dish.  Sprinkle with cheese, bake at 350 for 45 minutes. Cover if cheese is over-browning
